I use the mix and just dress it up a bit with extra garlic, lemon and sesame oil. No, it's not hard at all.
You just make the mix, let it rest for 15 minutes, then form it into little balls (heh hehe) and fry it on medium until it's crunchy. I serve mine with a yogurt and cucumber sauce, just like for gyros.
